You can visit the workshop (free guided tour on request) between 9am-12pm and 1.30-5.30pm. The site is closed on Sundays off-season.
To whet your appetite for the tour, you can also sample the fare at the beautiful hotel-restaurant Relais & Châteaux run by the Michelin-starred Bras family, the famous Laguiole cheese, and an aligot (a local dish of potatoes and cheese) made by the cheese cooperative Jeune Montagne.
